Fermentation/Winemaking - This sparkling wine is made in the Charmant Method, which is similar to the Champagne Method, but with one difference. The base wine (fermented wine before its turned bubbly) is turned into sparkling in a large batch in a stainless steel tank, rather than in each individual bottle. This is also called the Tank Method and is popularly used for Prosecco! Samantha's Sparkling wine took 6 weeks to finish its secondary fermentation at 48 degrees and was then aged on the lees in the tank for 8 weeks before bottling.

Pinot Noir

Pinot Noir is the world’s most popular light-bodied red wine. It’s loved for its red fruit, flower, and spice aromas that are accentuated by a long, smooth finish. A very versatile food pairing wine given it’s higher high acidity and lower tannin. Pinot Noir pairs particularly well with duck, chicken, pork, and mushrooms. Pinot noir famously hails from the Burgundy region of France. It is recognized as producing some of the most important, recognizable wines in history. In the last several decades, California has grown in acclaim for it's pinot noir on the world stage. The Russian River Valley, Santa Rita Hills and Santa Maria in particular can be relied upon to produce world class pinot noir.
